Macarons have to be one of the most impressive and delicate French pastries but can be quite challenging to master. In this one-day masterclass, we will take you through the whole process step-by-step, demystifying the art of the macaron. You will learn our expert pastry chef's trusted tips and tricks, as well as understanding many of the common pitfalls, so that you can replicate successful macaron-making easily at home.
We will be making four sumptuous flavours; classic Green Pistachio, fragrant Raspberry and Rose, exotic Passionfruit and White Chocolate and the refined Earl Grey and Dark Chocolate, which uses Madeleine's signature Earl Grey tea. You will learn about Italian meringue and French meringue methods for making macarons, as well as creating an array of different jam and ganache-based fillings. We will also give you plenty of ideas for different flavours to try out at home, so the sky is the limit for whatever you want to concoct to impress your friends and family!

No previous experience is needed for this class. All you need to do is bring yourself, enthusiasm and your love of baking, as all ingredients, equipment and tools will be supplied on the day. We will give you a Madeleine’s bag to carry your creations home.
Naturally there will be cake — and lots of it — to have throughout the day. There will also be a 45 minute break for lunch. We’re situated in East Sheen where you’ll find numerous cafés and places to eat.
